Snickerdoodle Bars

Use whisking beater | |
2-2/3 cups | all-purpose flour |
2 teaspoons | baking powder |
1 teaspoon | salt |
1 teaspoon | cinnamon |
1/4 teaspoon | freshly ground nutmeg |
2 cups | packed brown sugar |
1 cup (2 sticks) | unsalted butter, room temperature |
2 | eggs |
1 tablespoon | vanilla extract |
2 tablespoons | granulated sugar |
1teaspoons | cinnamon |
Preheat the oven to 350 degrees F. Lightly grease a 9×13-inch baking pan; set aside.
In a medium bowl, mix the flour, baking powder, salt, cinnamon and nutmeg; set aside.
In a mixing bowl, beat together the butter and brown sugar on medium speed until light and fluffy. This will take about 5 minutes
Add the eggs one at a time until well incorporated. Add vanilla, making sure to scrape the sides and bottom of the mixing bowl with a rubber spatula.
With the mixer on low speed, slowly add the flour mixture until just combined.
Again, scrape the sides of the bowl and pull the dough up from the bottom of the bowl to make sure all of the flour has been incorporated.
Put dough into prepared baking dish and spread evenly.
Mix granulated sugar and cinnamon in a small bowl and sprinkle evenly over the top.
Bake for 25-30 minutes or until surface springs back when touched lightly.
Cool completely before cutting.
