1 large onion, 3 ribs celery, 4 cloves garlic crushed, 1 medium bell pepper, 1 stick butter, 1 can tomatoes, 1 can rotel tomatoes, 1 pound crawfish tails, salt and pepper to taste, 4 packages cream cheese.

Place onions, celery, garlic and bell pepper in food processor. In black skillet, melt butter. Add vegetables and sauté on low heat with lid on until clear. Add food processed tomatoes. Add crawfish and simmer until all liquid is evaporated. Add season to taste. While still warm add cream cheese and mix well. Refrigerate and serve cold.
