Tagliare le patate a fette molto sottili e coprirle con il latte
Durante la cottura ogni tanto mischiarle
Quando son cotte, togliere una parte abbondante di latte (le patate non devono "navigare") e aggiungere un pezzo di burro
Prendere le fruste e "montare" il purè a fuoco spento
Aggiungere abbondante parmigiano e regolare di sale, se è troppo morbido, portarlo sul fuoco e mescolare sempre, fino alla cremosità desiderata
