BREAD - Pecan Whole-Wheat Bread With Maple Butter

2 tablespoons | active dry yeast |
2 1/2 cups | warm milk,, (105 to 115 F) |
1/3 cup | molasses |
3 tablespoons | vegetable oil |
2 teaspoons | salt |
2 cups | chopped and toasted pecans |
2 cups | whole-wheat flour |
1 cup | rye flour |
3 to 4 cups | bread |
all-purpose flour, alternative |

Directions
PECAN WHOLE-WHEAT BREAD WITH MAPLE BUTTER
Proof yeast by whisking into warm milk in a large bowl. Allow to sit for 5 minutes. If it doesn’t look frothy, discard and start over with fresh yeast.
Add molasses, oil, salt, pecans, whole-wheat flour and rye flour, and mix together. Mix in bread flour, 1/2 cup at a time, mixing until dough is stiff. Remove to well-floured surface. Knead in enough remaining flour to make a soft dough. Place in a lightly oiled bowl and let rise until doubled in bulk. Punch down and divide in half.
Place dough into 2 (9-by-5-inch) or (81/2-by-41/2-inch) loaf pans. Let rise until doubled.
Preheat oven to 350 F. Bake for 35 minutes. Remove from pans. Cool on wire rack. (You may need to cover tops with foil for final 10 to 15 minutes of baking if tops of loaves brown too quickly.)
Makes 24 servings.
Maple Butter: In a mixing bowl, combine 1/2 cup softened butter with 3/4 cup maple syrup and mix until fluffy. Makes 11/4 cups.
Club comments: The cook found the bread needed an additional 5 minutes baking time (total 40 minutes.) She let the dough rise for the first time overnight in the refrigerator and did the second rising in the morning with success. The recipe could easily be halved to make one loaf. She made Maple Butter, a recipe from the book, to accompany it, using an immersion blender.
