LETTUCE - SPINACH - 4 Summer Salads - Pizza, Pesto, Cobb and Caesar

1. Pizza
Whisk 6 Tbsp olive oil, 2 Tbsp balsamic vinegar, 1 minced garlic clove, and 1 tsp minced fresh basil; add salt and pepper. Toss with 6 cups greens, 1/2 cup halved cherry tomatoes, 1/4 lb sliced fresh mozzarella, 1/4 cup sliced black olives, 1/4 cup sliced pepperoni, 1/4 cup chopped fresh basil, and 1 Tbsp minced fresh oregano.
2. Pesto
Puree 1 cup basil with 1/2 cup olive oil in a food processor. Season with salt and pepper. Toss with 6 cups Bibb lettuce, 1/4 cup chopped fresh basil, 2 chopped scallions, and 2 sliced heirloom tomatoes. Top with pine nuts.
3. Cobb
Whisk 3 Tbsp olive oil, 2 Tbsp red wine vinegar, and 1 Tbsp Dijon mustard; season with salt and pepper. Toss with 8 cups spinach, 4 slices crumbled bacon, 1/4 cup crumbled blue cheese, 1 diced avocado, 1/2 cup halved grape tomatoes, and 4 quartered hard-boiled eggs.
4. Caesar
Whisk 1/3 cup olive oil, 6 minced anchovy fillets, 1 minced garlic clove, 1 tsp Worcestershire sauce, juice of 1 lemon, and 1/2 tsp dry mustard. Toss with 8 cups chopped romaine lettuce, 2 chopped beefsteak tomatoes, 1 cup croutons, and 1/3 cup grated Parmesan.
