Sautéed Pears and Red Onions

Ingredients 1 tablespoon EVOO – Extra Virgin Olive Oil | |
3 tablespoons | butter |
2 | red onions, root end attached and cut into thin wedges |
6 brown-skinned skinny-looking pears, quartered then cored | |
Salt | |
pepper | |
Freshly grated nutmeg, to taste | |
3 tablespoons | brown sugar |
Yields: Serves 4, use leftovers on sandwiches with brie.
Preparation
Heat EVOO in a large skillet over medium-high heat. Add butter and melt, add onions and pears and season with salt, pepper and nutmeg.
Sauté, stirring frequently until pears are tender but not mushy, 10-12 minutes. Sprinkle brown sugar over the pan and stir a minute or 2 more, serve immediately.
