Roasted Potatoes with Garlic Butter

8 Yukon gold medium potatoes peeled | |
3 medium | sweet potatoes peeled |
2 tbsp | canola oil |
1/2 tsp | salt |
1/4 tsp | pepper |
1/4 cup | butter |
3 garlic cloves minced | |
1 tbsp | minced fresh thyme |
1 tsp | dried thyme, alternative |
1/2 cup | shredded cheddar cheese |
1/3 cup | parmesan cheese |
cut potatoes into 1/8 " slices; toss with oil,salt and pepper.
divide between 2 grased 15X10X1 baking dishes.
Roast at 425 degrees for 17 20 minutes or until tender.
meanwhile, in a small skillet, heat butter over medium heat. Add garlic and thyme; cook and stir for 1 minute. Transfer roasted potatoes to a large mixing bowl. Add butter mixture; toss to coat. Sprinkle with cheeses; toss to combine.
