Tuna bake: Country Style

125g | screw noodles |
5ml | olive oil |
1 | onion, peeled and chopped |
125g | sliced mushrooms,, (1/2 punnet) |
15ml | flour |
15ml | tomato purée |
125ml | milk |
Pinch | dried basil |
1ml | salt |
Freshly ground black pepper | |
1 x 170gm | tin tuna in brine, drained |
60g | grated cheddar cheese |
10ml | Parmesan |
Preheat the oven to 180'.
Cook the pasta in boiling, salted water until just tender. Drain.
Heat the oil and sauté the onions and the mushrooms.
Blend in the flour and tomato purée.
Mix in the milk, basil, salt and pepper, stirring continuously until the mixture thickens.
Combine with the cooked pasta and tuna.
Pour the mixture into an oven-proof dish and sprinkle with cheddar and Parmesan.
Bake for 25-30 minutes.
