Molten Chocolate Cakes

4 T | unsalted butter, room temp |
1/3 cup | granulated sugar |
3 | eggs |
1/3 cup | flour |
1/4 t | salt |
8 oz | bittersweet chocolate |
Preheat oven to 400. Butter cups of muffin tins and set aside. Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each with mixer on low speed, beat in flour and salt until just combined. Beat in chocolate-- do not over mix. Divide batter evenly among muffin cups. Bake until tops of cakes no longer jiggle, about 8-10 min. Remove from oven. Let stand 10 min.
