Chocolate truffles

1.5 lbs (4.5 cups) | milk chocolate, melted |
1 cup | whipping cream |
1.5 t | vanilla |
Line an 8-in square baking pan with plastic wrap; set aside. Place melted chocolate in medium-sized bowl. In a 1-quart saucepan, scald cream. Remove from heat and let cool for 5 min. Stir in vanilla. Beat chocolate with a mixer. Stop mixer and pour cream all at once over chocolate. Continue beating until smooth; this takes 1-2 min. Pour into pan and refrigerate for 6 hours or until firm. Cut into 1-inch squares and dip in tempered dipping chocolate. Makes 64 pieces. For mint truffles, add 5 drops of peppermint oil in place of vanilla.
