Italian Lentil Soup

1 cup | sliced carrots |
1 small | onion chopped 1/3 cup |
5 cups | water |
1 1/2 tsp | sugar |
1/2 tsp | dried Oregano crushed |
1/2cup | celery sliced |
1 Tbs | Olive oil |
1 cup | tomato purée |
1 1/2 tsp | salt |
1/4 tsp | pepper |
3 cups | cabbage cut into 1 inch pieces |
1 cup | dry lentils rinsed and drained |
In large saucepan cook carrots celery and onions in hot oil for about 5 min. Stir in other ingredients Bring to a boil reduce heat Cover simmer 45 minutes or until lentils are very soft. Cornbread goes good with this soup, this soup came from Vi Macias
