Italian Lentil Soup

    1 cup  sliced carrots
    1 small  onion chopped 1/3 cup
    5 cups  water
    1 1/2 tsp  sugar
    1/2 tsp  dried Oregano crushed
    1/2cup  celery sliced
    1 Tbs  Olive oil
    1 cup  tomato purée
    1 1/2 tsp  salt
    1/4 tsp  pepper
    3 cups  cabbage cut into 1 inch pieces
    1 cup  dry lentils rinsed and drained

In large saucepan cook carrots celery and onions in hot oil for about 5 min. Stir in other ingredients Bring to a boil reduce heat Cover simmer 45 minutes or until lentils are very soft. Cornbread goes good with this soup, this soup came from Vi Macias
