    2 c  arugula
    1/2 bulb  fennel
    1/2 c  feta cheese
    1/2 c  pine nuts
    6  fresh figs
    1/2  lemon
    1 T  sherry vinegar
    1 T  olive oil
      salt to taste
      pepper to taste

1. Wash and de-stem the arugula. Toss in the olive and set aside in a bowl.
2. Slice the figs into 1/4" pieces.
3. Shave fennel and squeeze lemon over it. Add a pinch of salt and let sit a few minutes.
3. In a dry skillet, toast the pine nuts.
4. Toss vingegar, salt and pepper in with arugula. Gently fold in fennel, nuts, figs and feta.
5. Finish with fresh ground pepper and serve immediately.
