Broccoli casserole (Paula Dean)

| 1 (10 oz) package | frozen chopped broccoli |
| 1 small | onion, chopped |
| 4 tbsp (1/2 stick) | butter |
| 1/2 cup | grated cheddar cheese |
| 1/2 cup | crushed Ritz crackers |
| 1/2 cup | condensed cream of mushroom soup |
| 1/4 cup | mayo |
| Salt | |
| pepper to taste |
Preheat oven to 350 degrees. Steam broccoli about 10 minutes. Remove from heat and drain. Sauté onion in butter and add to broccoli. Add all remaining ingredients, mix well. Pour into casserole dish and add topping. (1/2 cup Ritz crackers and 1 tbsp melted butter)
