Serves: 6 Ingredients | |
1-15 oz. can | black beans, rinsed and drained |
1½ c. | frozen corn, thawed, (you can use also use fresh corn) |
2 large | tomatoes, seeded and chopped |
1 large | avocado, peeled and chopped |
1 purple onion, chopped | |
¼ c. | chopped cilantro |
3-4 T. | fresh lime juice |
2 T. | olive oil |
1 T. | red wine vinegar |
1 tsp. | salt |
1 tsp. | pepper |
Instructions
Combine ingredients in a bowl, cover and chill. Garnish with avocado and fresh cilantro. Serve with tortilla chips!
