Directions: In a saucepan, lightly sauté ½ chopped onion and 4 cloves of garlic (chopped) in 3 tablespoons of olive oil until soft. Add 2 cups of farro perlato to the pan – stirring to coat farro with oil. Slowly add 4 cups of water – salted to taste – or vegetable broth to the farro. Bring to a boil – then turn down to simmer for approximately 18 – 20 minutes until liquid is absorbed and farro is soft and chewy. For more flavor and appeal add vegetables or herbs to the simmering farro – such as carrots, mushrooms, peppers or any other vegetables or herbs you prefer. Serve hot topped with grated strong cheese such as pecorino or grana padano (optional)
