THREE CHEESE SOUFFLE

Preheat oven to 400 degrees

Beat 9 egg whites til they form soft peaks

In heavy saucepan melt 1 tbl butter
Blend in ¼ cup flour
Cook over low heat for a few minutes
Take off heat and whisk in 1 ¼ cup milk and put on heat
Whisk til smooth and thick
Add salt and pepper and nutmeg
Take off heat and one by one whisk in 8 egg yolks
Put on heat and stir in ½ c cheddar cheese, ½ cup Asiago cheese, ¼ c parmesan

Whisk in ¼ yolk - cheese mixture then remaining sauce
Pour into buttered soufflé dish sprinkled with parmesan

Turn oven down to 375 degrees and place on middle rack
Bake 25 – 35 minutes

Variations: include chopped spinach or cut up asparagus or leave out the cheese and add chocolate for a dessert!
