2 sticks | butter |
2 stalks | celery |
3 cups | onions |
1/2 cup | flour |
*Add flour to onions when onions are translucent in order to make a roux *Set roux aside to cool | |
1 pound | new potatoes cut into half inch cubes |
*Barely cover the potatoes with water *Par boiled potatoes *Drain then set aside the potatoes *Reserve 1 cup of potato water | |
1 quart | clam juice |
1 quart | clams |
*Add potato water, clams, and juice bring to boil *Skim the calm juice *Reduce heat and cook for 15 minutes *Whisk hot broth into roux *Combine roux, clams, and broth *Add potatoes *Cook for 15 minutes *add oregano and salt to taste. Serve in bowls with a dash of paprika *Add half a bottle of beer *cover and cook for 20 minutes | |
