Fresh Basil Sauce

shallot, alternative | |
1 | garlic clove |
1 Tablespoon | low fat margarine |
2 Tablespoon | all purpose flour |
1-1/4 cups | low fat milk |
1 ounce | fresh Parmesan cheese |
2 Tablespoons | chopped fresh basil |

Finely chop onion or shallot and crush garlic. In a saucepan over low heat, melt margarine. Add onion or shallot and garlic and cook 5 minutes, stirring. Stir in flour and cook 1 minute, stirring. Remove pan from heat and gradually whisk in milk. Return pan to heat. Bring slowly to a boil, whisking, then continue to cook until mixture thickens. Simmer 3 minutes. Grate Parmesan cheese. Whisk basil and Parmesan cheese into sauce and season with salt and pepper. Reheat gently before serving. Serve with chicken, fish, or pasta.
