Celery Sauce

1 small | onion |
8 ounces | celery |
2 Tablespoons | low fat margarine |
1/4 cup | all purpose flour |
2/3 cup | low fat milk |
2/3 cup | vegetable stock |

Finely chop onion and celery. In a saucepan over low heat, melt margarine. Add onion and celery to pan and cook 8 to 10 minutes or until soft, stirring occasionally. Stir in flour and cook 1 minute, stirring. Remove pan from heat and gradually stir in milk and stock. Return pan to heat. Bring slowly to a boil, stirring, then continue to cook until mixture thickens. Simmer 3 minutes. Remove pan from heat and serve with salt and pepper. Serve with roast chicken or turkey.
