Onion Sauce

    1  Onion
    2 Tablespoons  low fat margarine
    1/4 cup  all purpose flour
    2 cups  low fat milk
      Salt
      Pepper

Chop onion finely. In a saucepan over low heat, melt margarine. Add onion and cook 8 to 10 minutes or until soft, stirring occasionally. Stir in flour and cook 1 minute, stirring. Remove pan from heat and gradually stir in milk. Return pan to heat and bring slowly to a boil, stirring, then continue to cook until mixture thickens. Simmer 3 minutes. Remove pan from heat and season with salt and pepper. Serve with lamb or egg dishes.

Makes 2-1/4 cups/36 Tablespoons
