Alfredo Linguine with Shrimp and Spinach

2 tbsp | olive oil |
1 pig (16 - 20 shrimp, peeled, tail removed | |
1/4 tsp | salt |
pepper | |
1 lg | shallot, finely diced |
1 | garlic clove |
4 cups | baby spinach |
1/2 cup | white wine 1 jar Alfredo sauce |
Cooked linguine |
Heat 1 tbsp olive oil, sauté seasoned shrimp on both sides, set aside.
Heat remaining oil, add shallot, garlic and spinach, and cook. Add wine and simmer 1 - 2 min. Stir in Alfredo sauce.
Cook linguine, saving 1/3 cup of water and add to Alfredo sauce. Stir gently for 1 - 2 min. Add shrimp and toss.
Plate shrimp, and top with Alfredo sauce.
