Rosemary roasted chicken and potatoes

1 fresh young chicken roaster | |
3 cloves | garlic minced |
Grated peel and juice of 1 lemon | |
2 tablespoon | vegetable oil |
1 tablespoon | fresh rosemary leaves |
Pepper | |
salt | |
6 medium | potatoes cut into pieces |
Preheat oven to 425.
Mix garlic, lemon juice, oil, rosemary and pepper and salt. Place chicken , breast side up, in lightly oil large. Roasting pan. Place potatoes around the chicken. Drizzle garlic mixture over chicken and onto the potatoes. Bake 20 to 25 minutes per pound. Stir potatoes occasionally to brown them evenly. Let chicken sit before carving.
