Onion Rings

    1 large  sweet onion
    1/2 c  buttermilk
    1  egg white
    1/2 c  flour
    2 tbs  olive oil
      cooking spray
    1/2 tsp  salt

Preheat oven to 400. Cut onion into slices and separate into rings. Whisk together in a bowl buttermilk and egg. Dredge rings in flour and then in buttermilk mixture. Dredge again in flour and place on baking sheet. In a skillet heat 2 tbs oil. Add 4 onion rings at a time and cook on both sides. Continue to all onion rings have been fried. Place fried onion rings in a cookie sheet and bake for 3 mins. Turn over rings and bake 3 more mins. Remove from oven and sprinkle with salt. Serve hot.
