Garlic Flatbread

1 1/2 tsp | dry yeast |
1/2 c | warm water |
1 c | flour |
1/4 c | cornmeal |
1/2 tsp | salt |
1/3 c | chopped garlic |
3 tbs | extra virgin olive oil |
In a small bowl combine yeast and water and let stand for 8 mins until foamy. In a medium bowl mix flour, cornmeal, salt and garlic. Add yeast mixture and 3 tbs of evoo and stir until dough forms. Cover bowl with plastic wrap and let dough rise for 30 mins until dough has doubled. Preheat oven to 450. Lightly oil 2 sheet pans. Punch the dough down and divide in two. On a floured surface roll dough into a 12x10 rectangle. Repeat with remaining dough. Add whatever toppings you want and bake for 10 mins or until crispy.
