2 c | warm water 2pkgs active dry yeast |
6 c | bread or all purpose flour 2 1/2 salt |
1 large | garlic clove 3 c cherry tomatoes quartered |
1/2 c | Parmesan cheese 1/4 c extra Virginia olive oil |
1/2 tsp | pepper 1 c Pepperoni slices |
1 c | basil leaves Olive oil |
In a large bowl combine water and yeast and let stand for 5 mins. Add flour and 2 tsp salt. Combine well. Roll on floured surface. Knead for 6-8 mins. Shape dough into a ball. Place in a lightly greased bowl. Lightly grease dough and cover with a kitchen towel. Let rise for 1-2 hours. Dough will double.
Preheat oven to 425. To make sauce mince garlic with salt to make a paste. Add paste to tomatoes, parmesan cheese, 1/4 c oil, pepper and 1/2 tsp salt. Place dough unto floured surface. Stretch out into a large rectangle. Spread sauce over dough. Sprinkle pepperoni and basil on dough. Roll dough and cut into 10 pieces. Bake for 25-35 mins.
