Pork and Apple Tortilla Cups

1lb | pork tenderloin |
4 6in tortillas | |
1/4 c | chicken broth |
1/2 t | corn starch |
2t | cooking oil |
1 | red apple |
1 | green onion |
1 clove | garlic |
1/2 | lime peel shredded |
1tsp | lime juice |
1/4 t | salt |
1/8t | pepper |
1/4 c | plain nonfat yogurt |
Cut pork into thin strips across grain, then 1in wide. Wrap tortillas in foil and bake 350* 5-10 min. Spray custard cups, place tortillas in each cup, bake 350* 5-10 min til crisp. Remove from cups. Combine cornstarch & broth, set aside. Sir fry the pork.stir in apple, green onion, garlic, lime peel lime juice salt and pepper. Cook and stir till thick. Fill in cups.
