For one batch (two large cookie sheets) or about 2 1/2 quarts this is what I used. | |
3 cups | oatmeal, not quick cook |
3 cups | Special K cereal |
1 cup | almond slivers or sliced |
1 cup | coarsely chopped pecans |
1/2 cup | grade A or B pure maple syrup |
1/2 cup | brown sugar, (can be dark brown) |
1/2 cup | vegetable oil |
1 or 2 tsp | vanilla |
1 tsp | salt |
Mix dry ingredients in large bowl
Mix wet ingredients, syrup, sugar, oil, vanilla and salt, in a small bowl.
Mix two bowls together and stir gently until dry mixture is coated.
Spread on two cookie sheets. I bake mine at 250 - 275 for 45 minutes, stirring every 15 minutes, and then at 300 for 15 minutes, 1 hour total.
Options: You can add one cup of coconut during the last 15 minutes of baking time. Also, if you like, after it has baked, it's delicious with Craisins injected with Cherry juice (No, I don't inject them - they are made that way) or any other dried fruit you would like to use. You could also mix in more or other nuts in the original dry ingredient mixture. Kids would love chocolate chips stirred into the mixture after it cools. Also, if you don't like the flavor of Maple (??!@?%$??), you can substitute honey.
