Mexican Explosion Salad

Cut in to bite size chunks:
      Cucumber
    Small  Onion
      Red Pepper
Pour 1/4 cup of Zesty Italian Dressing over top, sprinkle with
      Cumin, Garlic, Paprika and Cayenne to taste.

Add can of drained Sweet Corn and can of drained & rinsed black beans
Cover and Marinate

Chop up several types of lettuce:
Romaine and Iceberg work best

Toss marinated vegetables and bean mix with lettuce.
Top with Cheddar Cheese
Top with Grilled Chicken

Sprinkle with crushed tortilla chips
Drizzle with Ranch Dressing

Definitely a salad that eats like a meal!
