Ingredients | |
1/2 lb | hamburger |
1/2 lb | pork |
1/2 lb | sirloin |
1 | russet potatoes, peeled and diced |
1/2 | yellow onion, diced |
1 | green pepper, diced |
2 large | tomatoes |
3 | fresh garlic cloves, minced |
2 Tbs (heaping) | tomato paste |
1 Tbs | olive oil |
1 Tbs | salt |
1 tsp | coarse ground pepper |
2 Tbs | ground cumin |
Optional: | |
1/4 cup | Olives and, or Raisins |
Roasted Red Pepper to taste |
Directions
1- Heat a large skillet and add olive oil.
2- Add ground meats and onions. When lightly browned, add green pepper, garlic, and all spices. Cook for 10 minutes, stirring occasionally.
3-Add diced potatoes. Cover, reduce heat to medium low, and simmer for about 40 minutes, until potatoes are done.
4- Add tomatoes, olives and raisins. Cook for 5 minutes.
5- Add tomato paste to thicken sauce.
6-Remove from heat; and serve with rice and plantains.
