Serves: about 3 adults Ingredients:
    1 - 2 Tbsp  Peanut Oil
    2  Chicken breasts, diced small
    3 medium  Carrots, thinly sliced
2 Peppers, diced small & any other veggies desired
    8  Mushrooms, thinly sliced
    1/4 cup  Cilantro
    1/4 cup  Green Onions, sliced
    1/4 - 1/2 cup  Roasted Peanuts
    1 - 2  Iceberg Lettuce heads, cored & halved (or Romaine)
    1-2 - 3/4 bag  Farkay, steam fried noodles

Sauce:

~ 3 tsp Garlic
~ 3 tsp Ginger
~ 1 cup Thai Sweet Chili Sauce
~ 1/4-1/2 cup Soya Sauce
~ 2-3 Tbsp Oyster Sauce
~ 2-3 Tbsp Hoisin Sauce

Directions:

Heat large sauté pan to high heat, add peanut oil & chicken. Add 1 tsp of garlic & ginger. Cook until thoroughly cook. Move chicken to a bowl & set aside.

Lower heat on sauté pan to medium high. Add veggies & 1/8 cup water to steam veggies & cook 2 mins. Add remaining ginger, garlic & rest of sauce ingredients. Cook 1-2 minutes & taste. Adjust sauce to liking. Add chicken to veggies & cook until veggies done to liking. Add cilantro, green onions & peanuts. Pour over noodles in large bowl. Mix gently. Serve with lettuce. Delicious the next day reheated.
