Chicken Lettuce Wraps - klw

1 - 2 Tbsp | Peanut Oil |
2 | Chicken breasts, diced small |
3 medium | Carrots, thinly sliced |
2 Peppers, diced small & any other veggies desired | |
8 | Mushrooms, thinly sliced |
1/4 cup | Cilantro |
1/4 cup | Green Onions, sliced |
1/4 - 1/2 cup | Roasted Peanuts |
1 - 2 | Iceberg Lettuce heads, cored & halved (or Romaine) |
1-2 - 3/4 bag | Farkay, steam fried noodles |
Sauce:
~ 3 tsp Garlic
~ 3 tsp Ginger
~ 1 cup Thai Sweet Chili Sauce
~ 1/4-1/2 cup Soya Sauce
~ 2-3 Tbsp Oyster Sauce
~ 2-3 Tbsp Hoisin Sauce
Directions:
Heat large sauté pan to high heat, add peanut oil & chicken. Add 1 tsp of garlic & ginger. Cook until thoroughly cook. Move chicken to a bowl & set aside.
Lower heat on sauté pan to medium high. Add veggies & 1/8 cup water to steam veggies & cook 2 mins. Add remaining ginger, garlic & rest of sauce ingredients. Cook 1-2 minutes & taste. Adjust sauce to liking. Add chicken to veggies & cook until veggies done to liking. Add cilantro, green onions & peanuts. Pour over noodles in large bowl. Mix gently. Serve with lettuce. Delicious the next day reheated.
