2 lb | ground beef |
1 | red pepper, diced |
1 | onion, diced |
2 cups | cooked rice |
1 can | black beans |
10 burrito-size tortillas
Shredded Mexican-blend cheese(s)
Saute onions & peppers, stir in and brown ground beef.
Add all other ingredients & any seasonings or tomatoes, peppers, chiles, etc.
Warm tortillas. Spoon about 1/2 cup or more of filling & top with cheese on a tortilla. Roll up like a burrito, seal/secure with a toothpick.
Bake in a 350 oven for about 15 min.
Great to freeze for later, then reheat in oven.
