Ingredients Bring dressing ingredients to a boil | |
1cup | olive oil |
1cup | vinegar |
1/2 cup | sugar |
1/2 tsp. | pepper |
1/2tsp. | salt |
1TBSP | Tabasco sauce |
1 tsp | cumin |
Boil until sugar dissolves &cool Drain &rinse | |
1- 16oz can | black beans |
1 16 oz can | extra sweet corn or frozen sweet corn |
Mix fresh ingredients | |
1 cup | diced red onion |
1 cup | diced red pepper |
1 cup | diced green pepper |
1 cup | diced yellow or orange pepper, (i use both |
1/4 cup | diced jalapeno pepper |
1/2 cup | chopped cilantro |
Add | |
2-3 med. | tomatoes |
preparations
Mix the veggies & dressing & store in refrigerator. makes large amount &will keep for up to 2weeks Just before serving add as many fresh chopped tomatoes to whatever amount you will use for the day.You may want to drain off some of the dressing before serving.
