Potatoes, roasted in duck fat

1 lb | potatoes |
4 Tbs | duck fat |
2 Tbs | flour |
1 t | salt |
Peel potatoes and cut them to the size you want to eat them. Par boil them. Whilst they're boiling put the roasting tin with a few Tbs of fat in the oven at about 400 I think. Drain potatoes and put back in the pot. Add a tiny bit of flour, put the lid on and shake to rough them up. Put them in the roasting try and mix with melted fat and salt. Roast for about 45 mins, stirring occasionally so they get crispy on all sides.
