    1/2 lb  onions, chopped
    1 tsp  minced garlic
    1/2 tbs  olive oil
    1 cup  quinoa
    1 cup  chicken stock
    1 cup  drained Italian plum tomatoes
    1 cup  tomato juice from canned tomatoes
    2 tbs  cilantro

Sauté onion and garlic in hot oil in a heavy- bottom pot large enough to hold remaining ingredients. When onion is soft, add quinoa, chicken stock, plum tomatoes and tomato juice. Bring to boil, reduce heat, cover, and cook for about 10 mins, until quinoa is tender. Sprinkle the cilantro over quinoa and serve as a side dish. Serves 6.
