MUFFINS and loaves Carrot load cake

1 c | oil |
3 | eggs, one at a time |
1/2 t | salt |
1 1/3 t | baking soda |
1 1/3 t | baking powder |
1 1/3 t | cinnamon |
1 1/3 c | flour |
Mix well. Fold in 2 c grated raw carrots and 1/2 c walnuts.
Bake 1 hr at 325 degrees in a loaf pan
