Taco Casserole

1 lb | ground xtra lean ground beef or turkey |
1 pkt taco seasoning mix | |
3/4 cup | water |
1 16-oz can | diced tomatoes, (Rotel?) |
1 16-oz can | pinto beans, drained & rinsed |
2 c | tortilla chips or-brokn taco shells |
1 c | shredded cheddar cheese |
4 | green onions |
1 | red pepper, diced |
1 cup | lettuce, chopped |
Brown meat in skillet. Drain. Add taco seasoning pkt & water. Cook approx 5 min until sauce is thickened. Add tomatoes & bring to a boil. Reduce heat. Cover & let simmer about 10 min, stirring occasionally.
Add pintos. Cook uncovered another 5-10 min or until liquid from tomatoes is reduced.
In an in greased 2-qt casserole dish, place chips. Top with meat mixture. Sprinkle with cheese. Microwave about 3 min to melt cheese.
Top with lettuce, green onion & red bell pepper. Serve warm.
