Breakfast Bunnies Posted on Apr 17th, 2013 This recipe is perfect if you are always on the run like me! I like a good shot of protein to keep me going so I came up with these little lovelies. They keep really well and they are kiddie approved! Recipe Yield: 6 Servings Cook Time: 20 minutes INGREDIENTS: | |
2 cups | flour |
2 tsp. | baking powder |
1/2 tsp. | baking soda |
dash | salt |
and 1/3 cup shortening | |
3 Tbsp. | mushrooms,, (or peppers, onions, meat) |
3 Tbsp. | Cheese |
4 | Eggs |
1/2 cup | milk |
INSTRUCTIONS:
Batch of biscuit dough (2 cups flour, 2 tsp baking powder, 1/2 tsp baking soda, dash salt and 1/3 cup shortening. Mix until crumbly and add 3/4 cup soured milk). Divide into six chunks for six large muffin tins (12 for regular size).
Press up along the sides of muffin tin
Add cheese and mushrooms (3 T. each and whatever combination you'd like: peppers, onions, meat...) Top with 4 eggs beaten with 1/2 cup milk and divide amongst the cups.
Bake for 20 minutes at 350.
