Sweet Potato & Apple Hask

Extra Virgin olive oil | |
4 slices | thick cut bacon |
1 | onion, cut in 1/2" dice |
Kosher salt | |
3 sweet potatoes and cut into 1/2" dice | |
1/4 cup | maple syrup |
1 1/2 cup | chicken stock |
3 | Granny Smith apples, peeled and cut into 1/2 dice |
Coat large sauté pan with olive oil, add the bacon and bring to med heat.
When bacon gets crispy 5-6 min add the onion. Season with salt and sauté until soft and aromatic 8-10 min.
Add sweet potatoes, ample syrup, and chicken stock. Cover and cook for 15-20 min, or until soft. Remove lid and let the liquid reduce by about half.
Add apples and cook 5-6 min or until apples are soft.
