Pea meal Bacon Roast

1-4 pound | peameal bacon roast |
3 T. | Balsamic vinegar |
2 T. | Honey |
3 T. | Olive Oil |
Preparation
Preheat oven to 375 degrees
Combine balsamic vinegar, honey and olive, set aside
Score peameal bacon roast. Drizzle with balsamic vinegar glaze. Transfer roast to baking pan with foil.
Roast, baking occasionally until internal temperature reaches 160 degrees F., about 1 Hour 45 minutes to 2 Hours. Tent with foil, and let stand 15 minutes before slicing.
Yield: 8 to 12 servings.
