Boil 1 pound new potatoes until tender. Drain and halve. Meanwhile, melt 1/2 stick unsalted butter in a skillet. Add a 1/4 cup small sage leaves and cook over moderate heat for 2 minutes. Add 2 thinly sliced scallions and cook for 2 minutes. Add the potatoes, season with salt and pepper and cook to warm through. Serve the potatoes with breakfast sausage.
