Penne with Fresh Tomatoes and Basil
Nb persons: 6
Yield: 2.5 cups
Total time: 20 minutes
|1 pkg.||penne or other cut pasta, 16 oz. package|
|2 lbs.||fresh tomatoes, chopped about 8 tomatoes|
|1/3 cup||olive oil, to taste|
|1 tsp.||minced garlic, about 2 cloves|
|1/2 tsp.||salt, to taste|
|20 leaves||fresh basil, chopped|
|1/4 cup||shredded Parmesan cheese, optional|
Cook the penne according to the package directions.
Meanwhile, in a large bowl, mix the tomatoes, oil, garlic, salt and basil. Smash the tomatoes in the oil with a fork or potato masher and let the mixture stand.
When the noodles are cooked, drain them well and toss them with the tomato mixture. Top it with Parmesan cheese, if desired.
