Chicken Fried Rice

2 | chicken breasts |
1/2 c. | green onion, sliced |
1 clove | garlic |
3 c. | long grain rice, cooked |
1/2 c. | egg substitute |
2 tsp. | vegetable oil |
1/4 c. | red pepper, chopped |
1/2 tsp. | ginger, ground |
2 tbsp. | soy sauce |
Directions:
- cut chicken into 1/2" strips and add to oil in skillet over medium high heat
- cook and stir chicken for 4-5 minutes then remove from skillet
- in skillet stir in the green onion and pepper and cook for 1-2 minutes
- add garlic and ginger and stir for 30 seconds then stir in rice and soy sauce
- reduce the heat and add the egg substitute, stirring occasionally
- return the chicken to the skillet and cook until heated through
