Gluten Free Banana Bread

Delicious and moist with all the flavour of Mom's but none of the gluten issues. The fact that all ingredients should be verified as "gluten free" is implied. Makes 2 loaves. | |
2 cups | GF All purpose flour |
1 tsp. | baking soda |
1/4 tsp. | salt |
4 | eggs |
2 cups | mashed ripe banana, (trick: the riper the better) |
1 c. | white sugar |
1/2 c. | unsweetened applesauce |
1/3 c. | canola oil |
1 tsp. | vanilla extract |
1/2 c. | chopped walnuts |
In separate bowl combine dry ingredients. In another bowl whisk together remaining ingredients.
Add moist to dry and stir until just moistened.
Pour into 2 oiled and dusted loaf pans. Sprinkle with walnuts.
Bake @ 350 deg. F 45-55 minutes or until toothpick inserted in middle comes out clean.
Remove from pans immediately and cool on wire rack.
