Apple Puff Pancakes

| 1 | apple, cored, peeled and diced |
| 2 tbs | butter |
| 1 tbs | sugar |
| 1/2 tsp | cinnamon |
| 3 | eggs |
| 1/2 cup | flour |
| 1/2 cup | milk |
| 1/2 tsp | salt |
| Powdered sugar |
Directions
Preheat oven to 400•F. In a frying pan, sauté diced apple with butter, sugar, and cinnamon just until tender. In a blender whip eggs, flour, milk, and salt on high for one full minute. Transfer hot apples to a 8x8-inch baking dish, lightly sprayed with cooking spray. Pour batter in over apples. Bake in oven for 15 to 18 mins. Generously dust each serving with powdered sugar or top with your favorite syrup. Serve hot.
