Pasta Salad (from Carol Herd - received from a friend)

Two cups | macaroni, cooked and cooled. (Your choice of shape) |
2 ripe tomatoes chopped ... -- (I use cherry or grape tomatoes which are firmer and nicer - cut in half. Also I add an hour before serving) | |
1 | green onion chopped,, (I use a little white onion) |
1/2 | green pepper, chopped,, (which ever colour you have works too) |
1/4 cup | cucumber chopped |
Mix together the following: | |
2/3 cup | sugar,, (a little less if desired) |
1/2 cup | oil |
1/3 cup | ketchup |
1/4 cup | vinegar |
1 tsp | salt |
1/4 tsp | pepper |
1 tsp | paprika |
Beat above ingredients with a fork until thick or put in sealed container or shaker bottle and shake well to blend.
Pour over pasta and vegetables, stir to combine well. If you have a large container with lid, you can easily store, stir or shake contents from time to time if made the day before. (Ok to make a day ahead which gives the time to marinate the flavour. Or just serve immediately if desired).
You can also alter the vegetables using things you may have on hand.
You can double the recipe for a larger crowd. (I didn't measure the pasta. I just used the amount I thought I needed to fill a large bowl). The pasta really absorbs the liquid, so I usually make a bit more in order to keep it moist. Extra vinegar and ketchup usually helps make enough extra sauce.
