* preheat oven to 450 degrees | |
2 tbsp. | chopped onion |
1/2 c. | uncooked long-grain rice |
1/4 tsp. | salt |
1 c. | frozen peas |
1 tbsp. | margarine |
1 c. | chicken broth concentrate |
1/2 | bay leaf |
1 tbsp. | margarine |
Directions:
- cook onion in margarine untile tender, not brown
- stir in the rice and cook while stirring for 2 minutes
- add the broth, salt, and bay leaf and bring to a boil
- pour into a covered casserole dish and bake for 18-20 minutes
- heat the peas in 1 tbsp. margarine
- once the rice is cooked, stir in the peas and serve
