Fruit Pancake

Ingredients:
1/4 Cup Butter
1/2 Tsp. Cinnamon
4 Large Eggs, separated
1/3 Cup Flour
1/3 Cup Milk
1/4 Cup Brown Sugar
4 Apples, Plums, Peaches
1/3 Cup Sugar
1/2 Tsp. Baking Powder
Method:
Preheat over to 400 Degees F.
Melt butter in the oven in a 10-inch round baking dish. Remove from oven and
sprinkle with brown sugar and cinnamon. Slice fruit and arrange in dish. Return
to oven for 8-10 minutes.
Beat egg whites until foamy and gradually beat in sugar until stiff.
Combine flour and baking powder, beat in milk and egg yolks and fold in egg
white mixture. Spread over fruit
Bake 20 minutes.
Loosen edges and invert onto serving plate. Serve with syrup, ice cream or
whipping cream.
