Orange glazed shredded carrots

1/2 cup | orange juice |
1/2 cup | chicken broth, less sodium |
1 tsp | cornstarch |
2 tsp | extra virgin olive oil |
20 ounce | carrots, julienne- cut (packaged) |
1 tsp | butter |
1/4 tsp | salt |
Prep;
1 whisk orange juice and cornstarch in a small bowl
2 heat oil in a large nonstick skillet over medium high heat. Add carrots and cook, stirring constantly, until slightly softened, about 3 minutes
3 stir the juice mixture and add to the carrots along with butter and salt. Cover and continue cooking, stirring occasionally, until the butter melts and the carrots are tender about 5 to 6 minutes.
