3-1/4 Cups All-Purpose Flour
1/2 Cup Ground Almonds
3/4 Cup Superfine Sugar
3/4 Cup Butter, in small pieces
3 Large Egg Yolks
2/3 Cup Current Jam
2-3 T. Powered Sugar

Method:

Line 2 baking sheets with parchment paper. Set aside. In the bowl of an electric
mixer, combine the flour, ground almonds, and sugar. Add butter and egg yolks; beat
until mixed and crumbly, about 1 minute. Press dough to-gether by hand. Divide the
dough into 3 pieces. Shape each piece into a ball and wrap in plastic wrap. Refrigerate
for 30 minutes. Halfway through chilling, preheat over to 400 degrees.
Roll out each ball of dough on a lightly floured work surface or between 2 sheets of
parchment paper. Using a 2-1/2 inch star cookie cutter, cut out cookies. Using a
smaller star cutter to cut out centers of half of the cookies.
Arrange cookies on the prepared baking sheets. Bake for 10-12 minutes then transfer
to a wire rack to cool.
Spread a thin layer of jam over the cookies with centers left intact. Sift the powered
sugar thickly over the cookies with cut-outs. Place a sugar-dusted cookie over each
Jam-coated cookie.
