2 Cups All-purpose flour
1 Tsp. Baking Soda
1 Tsp. Ground Cinnamon
1/4 Tsp. Ground Nutmeg or Allspice
1/2 Cup Sugar
1/2 Cup Butter, Room temperature
1/2 Cup Molasses (grease cup before measuring
2 Large Egg Whites
1 Large Egg
1/2 Cup Washed and dried currants or raisins

Method:

Preheat oven to 350 Degrees. In a medium sized bowl, combine flour, soda, cinnamon
and allspice or nutmeg.
In a large bowl with electric mixer on medium, cream the sugar and butter until light yellow
and fluffy, scraping sides of the bowl often. Add the molasses, egg whites and egg and
beat well. Using a wooden soon, stir in the flour mixture just until flour disappears. Fold
in the raisins and walnuts.
Drop dough by rounded T. 2 inches apart on lightly greased baking sheets. Bake 10-12
minutes or until cookies are set and the edges are brown (you want the cookie to be
chewy). Remove cookies and cool on wire racks. Lightly sift icing sugar over if you like..
